Calling all healthy snack aficionados! Lakeside's Blushes are a delightful natural treat that blends a fruity, intense taste with a sweet refreshing snap. Be the first to try these delicious little wonders. 


RECIPES

BLUSHES & Burrata

PREP TIME:  35 Minutes

SERVES: Four to Six

INGREDIENTS:

  • 2 cups Lakeside Blushes tomatoes, halved
  • 1 tbsp fresh mint leaves, chopped
  • 1 tbsp fresh basil leaves, chopped
  • 2 tsp lemon zest
  • 2-3 tbsp extra virgin olive oil
  • Fresh buffalo mozzarella or burrata
  • Kosher or artisanal salt and fresh ground pepper to taste
  • Baguette, sliced and toasted

PREPARATION

Toss the Blushes tomato halves with the mint, basil and lemon zest.

Transfer the Blushes into a serving dish with the cheese.

Drizzle the olive oil over the Blushes and mozzarella or burrata; season with salt and pepper.

Serve with slices of fresh or toasted baguette, and more olive oil for drizzling over top.

BLUSHES & Cucumber Salad

PREP TIME:  35 Minutes

SERVES: Four (as an appetizer)

INGREDIENTS:

  • 2 cups Lakeside Blushes  tomatoes, halved or quartered
  • 1 cup Lakeside Mini Cucumbers, sliced into ribbons using a vegetable peeler
  • 1/2 cup kalamata olives,
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh oregano leaves
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh lemon juice
  • 1/2 tsp garlic, finely minced (optional)
  • kosher or artisanal salt and fresh ground pepper taste

PREPARATION:

Combine the Blushes, Mini Cucumber ribbons, olives, feta, oregano (and garlic if using).


Whisk the lemon juice into the olive oil, and mix into the salad.

Season well with the pepper, and salt.
