Beef Fajitas

PREP TIME:  25 Minutes

SERVES: Four

INGREDIENTS:

  • 2 Lakeside Bell Peppers, chopped
  • 1 lb beef steak
  • 1 cup green beans
  • 1/2 cup corn
  • 1/2 red chili pepper, sliced
  • 1 red onion, chopped
  • 2 tbsp tomato sauce
  • 1/2 cup vegetable oil
  • 1 lime
  • 1/4 cup cilantro, chopped
  • Salt and pepper

PREPARATION

Heat 3 tbsp oil in a skillet and add the beef, frying for 4 minutes on each side. Remove from pan and let cool, then slice into strips.

Add remaining oil and saute all vegetables for 5 minutes. 

Add beef strips to pan and heat through, mixing in the tomato sauce, salt, pepper, and lime juice. Sprinkle with fresh cilantro.

Eat as-is or serve with sour cream, chili sauce and tortillas.
