Cucumber Spaghetti Tomato Salad
PREP TIME: 15 Minutes
- 2 Lakeside English Cucumbers
- 1.5 cups Lakeside Tomatoes on the Vine, quartered
- 1 cup green olives
- 1 cup arugula
- 2 tbsp lemon juice
- 3 tbsp olive oil
- 1 tbsp balsamic glaze
- 1/2 cup toasted pine nuts
- 2 tbsp oregano leaves
- Sea salt and pepper to taste
Chop the ends off of both cucumbers and spiralize.
Place cucumbers, tomatoes, olives, lemon juice, olive, salt, and pepper in a mixing bowl and toss together. Let the mix sit for 20 minutes to marinate.
Place a bed of arugula on a serving plate and top with salad mix.
Drizzle balsamic glaze over the salad, then top with pine nuts and oregano.
