Egg Stuffed Peppers Recipe
PREP TIME: 10 Minutes
SERVES: One - Two
- 3 Lakeside Bell Peppers, differing colors
- 3 Eggs
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Cut the bell peppers into rings.
Heat olive oil in a pan and place in peppers.
Crack eggs into the pepper rings and season.
Cook until eggs are firm.
