Greek Salad Recipe

PREP TIME:  15 Minutes

SERVES: Two

INGREDIENTS:

  • 1 Lakeside Long English Cucumber

  • 1 Lakeside Roma Tomato

  • 1 Lakeside Bell Pepper

  • 2 Lakeside Mini Sweet Peppers

  • 1 Radish

  • 1/4 Red Onion

  • 1 Bunch Parsley

  • 1/2 Cup Black Olives

  • 1/2 Cup Cubed Feta

  • 2 Tbsp Olive Oil

  • 1 Tbsp Pine Nuts

PREPARATION

Cut tomato into wedges. Thickly slice Peppers, cucumber, and onion. Thinly slice radish.

Roughly chop parsley and add to a blender with olive oil. Blend until parsley is well mixed with the oil.

Add all veggies to a bowl or plate. Top with olives and feta.

Drizzle on the parsley dressing and serve!
