Red Pepper Soup Recipe

PREP TIME:  30 Minutes

SERVES: Two

INGREDIENTS:

  • 2 Lakeside Red Bell Peppers

  • 1/2 Cup Chopped White Onion

  • 1 Clove Chopped Garlic

  • 1 Tbsp Olive Oil

  • 1/2 Cup Vegetable Broth

  • Chili Flakes

  • Salt and Pepper

PREPARATION

Set a nonstick pan on medium heat. Once hot, place 2 full bell peppers. Cook until tender and blackened. Let cool then chop.

Add olive oil to the hot pan and toss in chopped onions. Stir occasionally until browned. Add in peppers and broth.

Use an immersion blender to blend soup until it becomes fully liquid.

Pour into a serving bowl and garnish with salt, pepper, and chili flakes.
