Pink Gazpacho Recipe

PREP TIME:  15 Minutes

SERVES: Three - Four

INGREDIENTS:

  • 8 Lakeside Long English Cucumbers

  • 12 Small Radishes

  • 1 Can of Garbanzo Beans

  • 1 Cup Greek Yogurt

  • 2 Garlic Cloves

  • 1 Tbsp Chives

  • Salt and Pepper to taste

PREPARATION

Peel and de-seed cucumbers before chopping.

Chop garlic, chives, and radishes.

Add all ingredients to a blender and blend until smooth.

Chill for 1 hour and serve.
