Cauliflower Rice Tabbouleh Recipe

PREP TIME:  10 Minutes

SERVES: Four

INGREDIENTS:

  • 2 Lakeside Roma Tomatoes

  • 1 Lakeside Long English Cucumber

  • 2 Cups Cauliflower Rice

  • 3 Tbsp Mint

  • 3 Scallions

  • 1/2 Cup Parsley

  • 2 Garlic Cloves

  • 1/4 Cup Olive Oil

  • 1/4 Cup Lemon Juice

PREPARATION

Chop all vegetables and toss in a bowl with the cauliflower rice.

Roughly chop and mix in mint, scallions, garlic and parsley.

Toss the salad with olive oil and lemon juice.

Serve cold and enjoy!
