Tomato & Basil Soup
PREP TIME: 20 Minutes
- 2 lbs Lakeside Tomatoes on the Vine, peeled and chopped
- 1/4 cup extra virgin olive oil
- 1 yellow onion, chopped
- 1/4 cup cream cheese
- 3 garlic cloves, minced
- 2 cups vegetable broth
- 1/2 tsp thyme leaves, chopped
- 1 cup basil, chopped
- 1 leek, chopped
- 1 tbsp red chili pepper, chopped
- 1/2 cup fresh cream
- salt and pepper to taste
Heat the olive oil in a sauce pan over medium heat.
Add the onions and leek, and cook for 3-4 minutes. Then add garlic, thyme, basil, and chili pepper. Stir for a minute.
Add tomatoes and broth, bring to a boil, and simmer for 15 minutes.
Mix in cream cheese, salt and pepper.
Serve with a tablespoon of fresh ream and basil.
