Vegetarian Chili Recipe

PREP TIME:  30 Minutes

SERVES: Six

INGREDIENTS:

  • 2 lb Lakeside Cherry Tomatoes

  • 2 Lakeside Bell Peppers

  • 2 carrots

  • 1 cup celery stalks

  • 1 yellow onion

  • 2 cups kidney beans

  • 2 cups borlotti beans

  • 2 cups edamame

  • 8 oz tomato sauce

  • 3 tbsp tomato paste

  • 2 tbsp olive oil

  • 2 garlic cloves

  • 2 cups vegetable broth

  • 1 tbsp cumin

  • 4 tbsp chili powder

  • 1 tbsp paprika

  • salt and peppere

PREPARATION

Halve the tomatoes and chop all remaining vegetables.

Heat olive oil in a large pan. Add onion, garlic, carrots, celery, and saute for 4-5 minutes.

Add bell peppers and tomatoes. Cook until tender.

Add all other ingredients except seasonings and edamame, Cover and simmer for 20 minutes.

Add seasoning and edamame. Simmer for another 5 minutes and serve hot.

For added flavor, top with sour cream, chopped green onion, and grated cheddar.
